Stacy Carr and Joshua Hoofard form a dynamic team passionate about restoring faith, health, and stewardship through hands-on, practical teaching. They bring over 40 years of combined experience in agriculture, craftsmanship, fabrication, and biblical living. Together, Stacy and Joshua teach agricultural practices, woodland and homesteading skills, meat processing, knife sharpening, and the biblical foundations of stewardship in a way that is approachable and easy for everyday people to understand. Their mission is to equip others to live more self-sufficiently, more faithfully, and more connected to the land and the Creator who designed it.
Join Stacy and Joshua as they teach how to harvest sheep the biblical way, providing instruction on sharpening your knives and harvesting multiple ways while staying safe. They will also teach you how to skin and make the cuts while keeping everything sanitary using both the homestead and traditional methods. There will be multiple sheep with plenty of hands-on opportunity. The lamb meat and organs will be used for the meals at the event. Children and teenagers are welcome to participate under adult supervision as these workshops are meant to equip our next generation.

Farm Foundations Consulting
JEH Construction
Tim Eng is a West Point graduate and Army combat veteran who served over 14 years as a combat engineer, including an 18-month deployment to Iraq in support of Operation Iraqi Freedom. There, he led soldiers in building defensive outposts and fortifying life-support systems in austere environments—experience he now applies directly to helping modern homesteaders secure their land, resources, and families. Known as The Homesteading Agent, Tim combines tactical expertise with real-life homesteading on 40 acres in East Tennessee, where he and his family raise dairy and beef cattle, sheep, ducks, and chickens. Through his SAFE Method—Situational Awareness, Access Control, Fortifications, and Everyday Readiness—Tim equips homesteaders with practical strategies rooted in military doctrine and adapted for resilient rural living.
